It’s been a bit since I did any substantial baking, but this weekend was the perfect excuse to throw some together for a dinner party! These Gluten Free Cookie Monster Cupcakes are simple and so delicious. My secret to amazing GF cupcakes is actually using the Betty Crocker Devil’s Food Cake mix- always so fluffy and people never realize they are actually gluten free. These were topped with a simple vanilla Buttercream and broken up crispy cookie crumbles (Trader Joe’s gluten free brand). So easy and homemade tasting without having to start from scratch!
