Happy Valentine’s Day! Our obsession with the Gluten Free Kodiak Cake mix continues! There are a bunch of recipes on Pinterest using the mix to make donuts, so we made these little miniature breakfast cakes. They could not have been easier- the longest step was pouring the batter into the pan without making a huge mess hah and they were baked in like 6 minutes.
Several of the recipes I saw used a protein powder glaze to top their donuts- I tried one that sounded appealing, and let me tell you it was the epitome of Pinterest fail. Absolutely disgusting texture and taste, so I threw together just a simple one made with berry juice to make a very light drizzle.
I think I still prefer the Pumpkin Muffin recipe from the back of the box that we made first actually, but I don’t always feel like pumpkin flavors so I need to experiment with some other flavor profiles using the mix.
