I love almost any sweet treat, but the combination of cookies and icing is basically unbeatable for me. And guaranteed you will always have me at Nutella, no questions asked. I recently discovered the Immaculate Baking Gluten Free Chocolate Chip cookie dough, and it is truly the best and easiest way to make the perfect gluten free cookie. For some reason as much as I bake, I have always struggled to get a homemade GF cookie to come together well (same for brownies, actually) but I swear you can not tell that these are not homemade!
The magical twist to these, though, is adding the Nutella to make the buttercream frosting for the centers. It really cuts down on the over the top sweetness that some buttercreams can have and really adds a nice flavor dimension.
To make the Nutella Buttercream I blended:
- 2 sticks of unsalted butter (just slightly softened)
- 2 cups of powdered sugar
- 2/3 C Nutella
- 1 t pure vanilla extract
- 1-2 T of unsweetened Vanilla Almond Milk (add in slowly to get consistency correct)
- Pinch of salt
These were super quick and easy to do, and honestly are just as fresh and soft as any bakery cookie sandwich that I have had! This will definitely be my go-to GF cookie dough.. now if only they can make a sugar cookie one?!
