Got three ripe bananas in your kitchen? I feel like every quasi to very healthy recipe now calls for exactly that as the starting point for any alternative baked good. And it just so happened that I had those and some Coconut Flour to try out last night and we needed a new quick breakfast item to have on hand now that we are back into the school morning routine here. I used this recipe from Ambitious Kitchen and it turned out so yummy that we have almost finished the entire loaf less than 24 hours later!
I actually used mini chocolate chips and some whipped peanut butter due to available pantry ingredients so my batch was not Paleo, but I would definitely recommend trying this recipe out! I love that this has a nice sweet flavor without a ton of added unnatural sweeteners, and the banana is quite subtle as well.
