That’s a lot of “free” for one muffin! I am always looking for new, easy recipes that include things which happen to already be ready in my kitchen or pantry to prepare, so when I came across this one from my friend over at Core Matters I decided to throw it all in the Ninja and was pleasantly surprised! These were perfectly timed for the “Muffins with Mom” event at my daughter’s school this morning so that I could bring along my own Celiac friendly baked good for the occasion!
These turned out delicious and the mini size were perfect to pack up for a school snack for our daughter and she feels like they are a treat because of the chocolate chips!
I think next time I might try out adding some protein powder and substituting with Sun Butter (I did half PB and Sun Butter for this batch). You could definitely play around with these for a variety of flavor combinations. I had put the chips mixed up into the batter so they were melted into the muffins, but they would still be tasty without those added if you wanted to skip. These were so easy to do, though, and will definitely be on rotation at our house!
